What Is Pot Distillation?

Pot distillation is a batch process using a simple kettle-shaped still, producing a more flavourful, characterful spirit than continuous column distillation.

Pot distillation is the older of the two major distillation methods, and it's built around a simple, kettle-shaped copper vessel called a pot still.

How it works

A batch of fermented wash is loaded into the pot and heated. Alcohol vapour rises, passes through the still's neck (sometimes through a smaller secondary boiler or additional plates, depending on design), and is condensed into spirit. Once that batch is fully distilled, the pot is emptied, cleaned and reloaded for the next batch — it's inherently a batch process, not continuous.

Why it produces more character

Because pot distillation doesn't rectify the spirit as thoroughly as a column still, more of the original fermented wash's flavour compounds — including congeners like esters and fusel alcohols — carry through into the final spirit. This is a big part of why pot-distilled spirits (single malt Scotch, cognac, many rums, traditional gin) tend to taste richer and more distinctive than column-distilled equivalents.

Trade-offs

Pot distillation is slower and less efficient than column distillation — each batch requires heating, distilling, cooling and cleaning before the next can begin, and yield per run is lower. That's part of why pot-distilled spirits are often positioned (and priced) as more premium or characterful than mass-produced column-distilled spirits, though this isn't an automatic rule — it's simply the more traditional, hands-on method.
