What Is Mashing?

Mashing is the process of mixing crushed grain with hot water to convert its starch into fermentable sugar, producing the liquid ("wort") that yeast will later ferment.

Mashing is the step that turns solid grain into a sugary liquid that yeast can actually ferment — it's essentially the same first step used in brewing beer, which is why whisky is sometimes described as "distilled beer."

Why it's necessary

Yeast can't ferment starch directly — it needs simple sugars. Grain (whether malted barley, corn, wheat or rye) contains plenty of starch but very little directly fermentable sugar, so mashing uses heat and enzymes to convert that starch into fermentable sugars first.

How it works

  1. Milling — grain is ground into a coarse flour ("grist") to increase the surface area available for the mashing process.
  2. Mixing with hot water — the milled grain is combined with water at a carefully controlled temperature.
  3. Enzyme activity — enzymes (naturally present in malted grain, or sometimes added separately for unmalted grain) break down starch molecules into simpler, fermentable sugars during this hot-water soak.
  4. Separation — the resulting sugary liquid, called wort, is drawn off from the solid grain residue ("spent grain" or "draff"), ready for fermentation.

Mashing across different spirits

  • Whisky — grain-based mashing, as described above, using malted barley and sometimes other grains.
  • Vodka — similar grain (or potato) mashing, depending on the base.
  • Rum — doesn't need mashing in the same sense, since molasses and cane juice already contain directly fermentable sugars rather than starch.
  • Gin — mashing happens further upstream, in the production of the neutral base spirit, before botanicals are ever introduced.
