What Is Column Distillation?

Column distillation runs continuously through a tall, multi-plate column, producing a lighter, more highly rectified spirit than a pot still.

Column distillation (also called continuous distillation) uses a tall column fitted with a series of internal plates or trays, rather than the single kettle-shaped vessel used in pot distillation.

How it works

Fermented wash is fed continuously into the column, rather than in individual batches. As it moves through the column and is heated, alcohol vapour rises through successive plates, with each plate acting like a small additional distillation step — condensing and re-vaporising the rising vapour repeatedly. This repeated refinement is what gives column distillation its characteristic ability to reach very high alcohol purity (rectification) in a single continuous pass, and it means the process can run non-stop rather than needing to be emptied and reloaded between batches.

Why it produces a lighter spirit

Because the vapour is refined through so many plates, most of the heavier flavour compounds (congeners) present in the original wash get filtered out along the way, leaving a cleaner, more neutral spirit. This is exactly what's wanted for vodka and for the neutral base spirit used in most gin.

Trade-offs

Column stills are more efficient and can run continuously at higher volume than pot stills, but that efficiency comes at the cost of retained character — a column-distilled spirit generally has less of the raw ingredient's distinctive flavour coming through, by design.

Where you'll find it

Column stills are standard for vodka, neutral gin base spirit, grain whisky, and many light rums. Some producers use column and pot stills together — for example, distilling a neutral base on a column still, then redistilling with botanicals in a pot still for gin.
